My mom was a Home Economist and raised us 4 children after my parents were divorced. She had a hand-written cookbook that had this recipe in it. I made it for the Jefferson County Fair on August 28, 2010, and it won First Place.

It's dense enough to hold its shape but at the same time light and fluffy. We can see why Judi won first place for this delicious banana bread recipe. 1 3/4 call-purpose flour

1 tspbaking soda

1 1/2 tspbaking powder

1 tspcream of tartar

1/2 tspsalt

1/3 cshortening
-
2/3 csugar

2eggs

1 cbanana pulp (3-4 ripe bananas)

Every oven is different. It took a few minutes longer for our tester to come out clean.

1Preheat oven to 350 degrees.

2Mash ripe bananas with a fork.

3Cream together shortening and sugar. Add eggs, mixing well.

4In another bowl, sift together flour, baking soda, baking powder, cream of tartar, and salt.

5Add flour mixture a little at a time.

6Alternating with banana mixture, mixing well after each addition.

7Turn into greased loaf pan.

8Bake for 45 minutes to 1 hour, or until the top is brown and a toothpick inserted comes out clean.

9Let cool in pan for 5 minutes then turn out onto cooling rack.
