This recipe is easy for someone like myself who has neuropathy/arthritis and can't knead dough. This is a NO knead recipe and they turn out very tasty. First time I made these, my family begged me to make more! They are easy enough to make that you don't have to wait for holidays, etc., to fix a batch!

  • 2 Tbsp
    shortening
  • 3 Tbsp
    white sugar
  • 1 c
    hot water
  • 1 (.25 oz) pkg
    active dry yeast
  • 1
    egg beaten
  • 1 tsp
    salt
  • 2 1/4 c
    all purpose flour

    1.Preheat oven to 425 degrees F. Grease 8 muffin cups**. 2. In a large bowl, mix the shortening, sugar, and hot water. Allow to cool until lukewarm, and mix in the yeast until dissolved. Mix in the egg, salt, and flour. Allow the dough to rise until doubled in size. 3. Divide the dough into the prepared muffin cups, and allow to rise again until doubled in size. 4. Bake for 10 minutes in the preheated oven, or until a knife inserted in the center of a muffin comes out clean. **If you don't want to use the muffin cups, you can "drop" the sticky dough onto prepared baking sheets and let them rise. I normally serve these with honey butter and my family eats them up quickly! Hope you and your family enjoy them as much as us!
