Ingredients For famous inn nut rolls

  • BREAD :
  • 1 c
    dairy sour cream
  • 6 c
    all purpose flour
  • 1/2 tsp
    salt
  • 1/2 lb
    butter
  • 3 lg
    eggs
  • 2 pkg
    dry active yeast
  • 1/2 c
    warm milk
  • 3 Tbsp
    granulated sugar
  • FILLING:
  • 3 lg
    egg whites
  • 1 tsp
    vanilla
  • 2 Tbsp
    melted butter
  • 2 c
    granulated sugar
  • 2 lb
    coarsely ground walnuts
  • 3 lg
    egg yolks

How To Make famous inn nut rolls

    Bread: Dissolve yeast in warm milk to which 1 T. sugar has been added, Set aside to rise. --- Beat eggs add remaining sugar and sour cream. Mix well and set aside. --- Cut butter into flour and salt as for pie dough. --- Stir in sour cream mixture and then add yeast mixture and mix well.

    Turn onto floured surface and knead until smooth, adding more flour if necessary. Divide dough into 4 equal parts. Roll out each part on floured board to 12 x 15-inch rectangle. --- Spread nut filling gently over dough, being careful not to tear dough. Roll up, folding sides in as you roll. Leave 2 inch edge without nuts at end of roll so filling does not leak out in oven. --- Place rolls seam-side down on a greased jelly roll pan and cover with a cotton cloth and set in warm place to rise, about 45 minutes, until double. --- Nut Filling: Whisk yolks with cold water for egg wash and set aside in fridge. Beat whites until stiff. Fold in sugar, vanilla, melted butter and nuts( add more butter if mixture is too stiff to spread).

    After rolls are double in size, brush with egg wash and bake in 350^ preheated oven for 35-40 minutes, until golden brown. Immediately wrap rolls in foil to retain moistness.
