This is a remarkable spiced zucchini bread recipe. Easy to make, it has notes of warm fall spices and just the right amount of dried fruit. It's perfectly sweet, delicious, and addictive. We kept having one more bite. If you're not careful, you may come back to the kitchen and only find crumbs.

    eggs
  • 2 1/2 c
    sugar
  • 1 c
    oil
  • 2 c
    shredded zuchinni
  • 3 tsp
    vanilla
  • 1/2 c
    chopped dates
  • 1 c
    raisins
  • 3 c
    all-purpose flour
  • 1 tsp
    baking soda
  • 1/4 tsp
    baking powder
  • 1 tsp
    salt
  • 3 tsp
    cinnamon
  • 1/4 tsp
    cloves
  • 1/2 c
    nuts (optional)
  • 8 oz
    drained crushed pineapple

How To Make delicious zucchini bread

  • Eggs, zucchini, sugar, and dried fruit in a bowl.

    In one bowl add 1st 7 ingredients and mix.
  • Flour and spices in a bowl.

    In a 2nd bowl add next 6 ingredients.
  • Nuts and pineapple added to the flour.

    Add nuts and pineapple to the flour mixture.
  • Flour mixture being added to the wet ingredients.

    Then mix flour mixture with 1 bowl of ingredients.
  • Batter poured into two loaf pans.

    Pour batter into 2 greased 9x5 loaf pans.
  • Zucchini bread baked until golden brown.

    Bake at 325 degrees for 1 hour.
