This is very moist bread. I love to make it when I can find fresh cranberries around Thanksgiving, but it is good anytime if you have some frozen.

Ingredients For cranberry nut bread

3/4 corange juice

1/2 cmayonnaise

2eggs, lightly beaten

2 1/2 call-purpose flour

2 tspbaking powder

1/2 tspbaking soda

1/4 tspsalt

1 c+ 2 Tbsp granulated sugar, divided

1/2 cpecans, chopped

3 tsporange zest, divided
-
1 1/2 cfresh cranberries
How To Make cranberry nut bread

1Combine the orange juice, mayonnaise, and eggs in a small bowl. Stir well.

2Combine flour, baking powder, baking soda, salt, 1 c granulated sugar, chopped pecans, and 2 tsp orange zest in a large bowl; stir well. Add the orange juice mixture to the flour mixture, stirring until blended. Gently fold in the cranberries.

3Pour the batter into a greased and floured 9 x 5 x 3 inch loaf pan.

4Combine 2 tablespoons sugar and 1 teaspoon orange zest; sprinkle evenly over the batter. Bake at 350 degrees F for 1 hour or 1 hour and 10 minutes or until a wooden pick inserted in the center comes out clean.

5Let the bread cool in the pan for 10 minutes before removing from the pan. Remove the bread from the pan and continue to let it cool on a wire rack.
