One day after we had moved to Pensacola, Wendy, Jay, and I went back to Pascagoula to visit a dear friend, Mrs. Higgy. She was baking various breads. What an aroma! That day she shared several recipes with me. This is one of them. Very special because of the lady who gave it to me!

Ingredients For cranberry bread

2 call-purpose flour

1/2 tspsalt

1 1/2 tspbaking powder

1/2 tspbaking soda

1 cgranulated sugar

1egg, well beaten

2 Tbspbutter or margarine, melted

1/2 cfresh orange juice
-
grated rind of 1 orange
-
2 Tbsphot water
-
3/4 cchopped pecans

1 ccranberries, quartered
How To Make cranberry bread

1Sift dry ingredients together, and add egg, butter, orange juice, and hot water.

2Fold in nuts, cranberries, and orange rind.

3Bake in two greased loaf pans at 350 for 1 hour or until light brown.

4Cool and wrap in wax paper. Let ripen in refrigerator for 24 hours or more.

5SANDY'S NOTE: This bread is so good warm with butter. Also, it freezes well.
