Ingredients For coconut bread

  • 1 c
    butter, softened
  • 1 1/2 c
    sugar
  • 3
    eggs
  • 1/2 tsp
    vanilla extract
  • 1/2 tsp
    almond extract or coconut extract
  • 1 1/2 c
    flour
  • 1/2 tsp
    baking powder
  • 1 tsp
    salt
  • 1/2 c
    unsweetened coconut milk
  • 1 c
    shredded coconut
  • COCONUT GLAZE
  • 1 c
    powdered sugar
  • 1/3 c
    unsweetened coconut milk
  • 1 tsp
    vanilla extract

How To Make coconut bread

    Preheat oven to 350 degrees.

    In a stand mixer beat butter and sugar for about 3 minutes. While butter and sugar are beating, Combine flour, baking powder and salt in a bowl and stir with a fork.

    Add in one egg at a time beating until just incorporated. Next beat in extracts.

    Turn mixer to low and gradually add flour mixture and coconut milk until combined. Scraping bottom and sides of the bowl.Add shredded coconut to batter and give it one more mix.

    Grease loaf pan with non stick cooking spray. Pour batter in pan and spread evenly and bake about 1 hour to 1 1/2 hours.

    Coconut Glaze: In small bowl combine powdered sugar coconut milk and vanilla extract and whisk using a fork until combined. Pour over bread once it is cooled for 10-15 minutes. Pour glaze over bread and top with shredded coconut.
