With Fall approaching. I decided To create a new bread. This was a plain pumpkin bread recipe that I had hanging around for years. I made some changes to it. I decreased and increased some ingredients. I also added others. In addition, I added chopped Apples and a cinnamon filling to it. I no longer will be calling this a plain Pumkin bread recipe. It is moist, soft and delicious. If you like Pumpkin bread. I bet you'll love this one. Enjoy!

Ingredients For cinnamon nut filled pumpkin apple bread

  • BREAD
  • 3 c
    all purpose flour
  • 1/2 tsp
    baking powder
  • 1 1/2 tsp
    baking soda
  • 1 Tbsp
    pumpkin pie spice
  • 3/4 c
    packed brown sugar
  • 1 3/4 c
    granulated sugar
  • 1 tsp
    salt
  • 1 can
    15 ounces of pumpkin puree
  • 4
    eggs
  • 1 c
    canola oil
  • 2 c
    chopped apples
  • 1 c
    chopped walnuts optional
  • 1 tsp
    vanilla extract
  • FILLING
  • 1 c
    chopped walnuts
  • 1 stick
    butter ( 1/2 cup) melted
  • 1/2 c
    packed brown sugar
  • 1/2 c
    granulated sugar
  • 1/3 c
    all purpose flour
  • 2 tsp
    cinnamon, ground
  • 1/2 c
    raisins (optional)

How To Make cinnamon nut filled pumpkin apple bread

    Preheat oven to 350°. Grease and flour, or parchment line 2 9 x 5 loaf pans

    In a large bowl combine all of the dry ingredients for the bread. Whisk together well.

    In another bowl. Mix eggs pumpkin, oil, and vanilla together. Mix pumpkin mixture into flour mixture. Combine well. Add the chopped apple and mix to combine. Do not beat mixture. Use a spoon.

    Make the filling. Mix all ingredients together in a bowl. It should resemble a crumbly paste. If not. Add a bit more flour.

    Layering filling and batter: Place half the batter in another bowl. Place 1/3 of the pumpkin batter of each bowl in the two loaf pans. Divide filling in half. Then sprinkle 1/4 of the filling over the batter in each pan. Avoid the outside edges of the batter. Top with 3rd of batter again. Then filling. Finish topping with remaining 1/3 of batter.

    Place in 350° oven and bake one hour or until toothpick inserted comes out clean. Cool and enjoy!
