Found this recipe among the recipes my Mom had kept over the years. This one is by her mother, Viva Johnson. I haven't tried it yet. If anyone makes it, please share with me how it turned out.

Ingredients For carrot bread

  • 1 1/2 c
    flour, sifted
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1 tsp
    salt
  • 1 tsp
    cinnamon
  • 3/4 c
    oil
  • 1 c
    sugar
  • 2
    eggs
  • 1 c
    carrots, grated
  • 1/4 c
    walnuts, chopped

How To Make carrot bread

  • 1
    Sift together flour,, baking powder, baking soda, salt and cinnamon
  • 2
    Combine in separate mixing bowl, oil and sugar
  • 3
    Mix well. Add eggs one at a time. Beat well after each addition.

    Add dry ingredients to wet mixture beating until smooth
  • 5
    Add grated carrots and chopped walnuts.

    Blend well and turn into a well-greased loaf pan (9 x 5 x 3)

    Bake in a moderate oven (350 F) for 55-60 minutes. Remove from pan and cool on rack
