bran muffins
My favorite brand of bran muffin mix was discontinued so I had to find a recipe I liked. I came up with this, it a mash up of several recipes.

Ingredients For bran muffins

1 1/2 cwheat bran (not cereal like bran flakes)

1/2 cboiling water

1/4 csoftened butter
-
2/3 cpacked brown sugar

1egg, lightly beaten

1 cbuttermilk
-
1 1/4 cwhite flour
-
1 tspbaking soda
-
1 tspsalt
-
1/2 tspcinnamon
-
1/2 tspvanilla extract
How To Make bran muffins

1Preheat oven to 400, grease muffins tins

2Pour hot water over bran, stir well to get it all moist

3Mix together butter and sugar

4Mix salt and baking soda into flour

5Mix all ingredients together, batter will be thick.

6Spoon into muffin tins. Bake 15 to 20 minutes.

7Note: I just discovered molasses powder and tried it today in this recipe. It really adds that certain something. I used 2 T. Got it from Amazon. Totally optional.
