bran muffins

My favorite brand of bran muffin mix was discontinued so I had to find a recipe I liked. I came up with this, it a mash up of several recipes.

Ingredients For bran muffins

  • 1 1/2 c
    wheat bran (not cereal like bran flakes)
  • 1/2 c
    boiling water
  • 1/4 c
    softened butter
  • 2/3 c
    packed brown sugar
  • 1
    egg, lightly beaten
  • 1 c
    buttermilk
  • 1 1/4 c
    white flour
  • 1 tsp
    baking soda
  • 1 tsp
    salt
  • 1/2 tsp
    cinnamon
  • 1/2 tsp
    vanilla extract

How To Make bran muffins

    Preheat oven to 400, grease muffins tins
  • 2
    Pour hot water over bran, stir well to get it all moist
  • 3
    Mix together butter and sugar
  • 4
    Mix salt and baking soda into flour
  • 5
    Mix all ingredients together, batter will be thick.

    Spoon into muffin tins. Bake 15 to 20 minutes.

    Note: I just discovered molasses powder and tried it today in this recipe. It really adds that certain something. I used 2 T. Got it from Amazon. Totally optional.
