2 1/4 cwhite sugar

2 cshredded zucchini

3 call-purpose flour

1 tspsalt

1 tspbaking powder

1/4 tspbaking soda

1 Tbspground cinnamon

1 ptfresh blueberries
How To Make blueberry zucchini bread

1Pre-heat oven to 350 degrees F. Lightly grease 2 loaf pans.

2In a large bowl, beat together the eggs, oil, vanilla, and sugar.

3Fold in the zucchini.

4Beat in the flour, salt, baking powder, baking soda, and cinnamon.

5Gently fold in the blueberries.

6Transfer to loaf pans.

7Bake 1 hour and 15 minutes in the preheated oven, or until a knife inserted in the center of a loaf comes out clean. Begin checking at 1 hour.

8Cool 20 minutes in pans, then turn out onto wire racks to cool completely.
