This recipe is from a 1981 Southern Living Cookbook. I have been making it regularly since then. It is a family favorite. I love it with fresh cranberries instead of the blueberries; however my husband likes it with the blueberries. It tasts great still warm and topped with cream cheese. I ALWAYS double this recipe and it makes 2 loaves that I bake together.

Ingredients For blueberry banana bread

1/2 cbutter, room temperature

1 csugar

2 lgeggs
-
1 cmashed banana (approx. 2 lg bananas)

1/2 cuncooked oats (either old-fashioned or quick cooking)

1/2 cpecans or walnuts, chopped

1 1/2 call purpose flour

1 tspbaking soda

1/2 tspsalt
-
1/2 cblueberries or cranberries
How To Make blueberry banana bread

1Cream shortening; gradually add sugar, beating until light and fluffy. Add eggs, one at a time, beating well after each addition.

2Stir in banana. Combine remaining ingredients, stirring gently. Add berry mixture to creamed mixture; stir just until moist.

3Spoon batter into greased and floured loaf-pan. Bake at 350 for 50-55 minutes.
