I volunteered to make a quick bread for a snack at our garden club. Since the topic was roses, I thought there should be something rosy in the bread - so strawberries!

Ingredients For berry-walnut bread

1/2 cvegetable oil

1/2 cplain yogurt or plain greek yogurt

2eggs

1 tspvanilla

1 1/2 cflour

3/4 csugar

1/2 cchopped walnuts

1/2 coatmeal
-
1 tspbaking powder
-
1 tspcinnamon
-
1/2 tspsalt
-
1/4 tspbaking soda
-
1/4 tspnutmeg
-
1 1/4 cchopped strawberries and blueberries
How To Make berry-walnut bread

1Preheat oven to 350ºF Spray a 9-by-5-inch loaf pan or 4 mini loaf pans with baking spray. Optional: line pans with parchment paper, leaving an overhang on two sides; then coat well with baking spray.

2Mix together the oil, yogurt, eggs and vanilla.

3In a separate bowl, whisk flour, sugar, chopped walnuts, oatmeal, baking powder, cinnamon, salt, baking soda and nutmeg.

4Fold the wet ingredients into the dry ingredients.

5Add berries tossed with 1 tablespoon flour to the batter.

6Add the batter to prepared pan/s and bake until a toothpick inserted into the center of the loaf comes out clean about 55 to 65 minutes. About 45 minutes if making mini loaves.

7Let cool 1 hour, then remove the loaf from the pan and transfer to a rack to cool completely.
