banana chocolate chip bars or loaves, my way

In NC we get a fantastic, and I mean drool worthy fantastic, banana chocolate chip bread. This is my version of making them into bars, and I have to say I always double the vanilla and chips, and when it says 1 cup bananas (or whatever the cup amount is in the recipe) I always use a pound instead! You could make these into loaves also, if you want. Same basic principle, but you would bake until toothpick comes out clean, so check the time you bake. I haven't done it in a loaf yet! :)

Ingredients For banana chocolate chip bars or loaves, my way

  • 3/4 c
    margarine or butter, softened
  • 2/3 c
    sugar
  • 2/3 c
    packed brown sugar
  • 1
    egg
  • 1 tsp
    vanilla (add more)
  • 2
    ripe bananas, mashed (1 cup) (i use 1 pound of bananas instead)
  • 2 c
    flour
  • 2 tsp
    powder
  • 1 c
    chocolate chips, or 1/2 cup miniature chocolate chips (i use more, entire bag semisweet)

How To Make banana chocolate chip bars or loaves, my way

    Cream butter and sugars, add egg and vanilla. Stir in bananas, then flour and powder. Mix well, making sure bananas mush (cause I add them in whole and let the mixer do the work). Stir in chips. Put evenly onto 15 1/2x 10 1/2 inch cookie sheet sprayed with Pam for baking (that has the flour in the spray too). Bake at 350 degrees 20-25 minutes.

    My suggestion if making loaves, depending on the size of the loaf pan (I use mini loaf pans as well as regular size ones, and even have some that are just huge), is to bake like making banana bread. My recipe directions say: Grease and flour 9x5 loaf pan or 2-8 1/2x4 1/2 pans. mix all but bananas. Then add bananas and mix well. Bake at 350 degrees 55-65 minutes. Remove from pans after 5 minutes. Cool.

    Note: I do a double batch of banana bread, and use one 12 oz package semisweet chocolate chips to make this.
