This moist bread combines banana and carrots for a different take on a low-fat banana bread. It makes great Christmas gifts, baked in small pans.

Ingredients For banana carrot bread

  • 1 c
    banana, mashed
  • 1 c
    sugar
  • 1/4 c
    oil
  • 1/2 c
    applesauce, unsweetened
  • 2
    eggs
  • 2 c
    flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    cinnamon
  • 1/2 tsp
    salt
  • 1 c
    grated carrots
  • 1/2 c
    chopped walnuts

How To Make banana carrot bread

  • 1
    Combine banana, sugar, oil, applesauce and eggs.

    Sift dry ingredients and fold into banana mixture, then add carrots and nuts.

    Pour into a greased 9 x 5" loaf pan and bake at 350º for 55 minutes or until done. Cool in pan on rack for 10 minutes, then remove from pan. Cool thoroughly before slicing. Makes 1 loaf.

    NOTES: A double batch fills 9 baby loaf pans - bake for 35 to 40 minutes. Makes great Christmas gifts. Also good with coconut or raisins stirred in. I have also used almonds instead of walnuts.
