I am not a huge fan of banana bread made with 1 cup of oil. It just leaves a big greasy spot on my napkin, and my arteries cringe! This recipe is one I have developed over the years, and which my husband's co-workers at the steel mill ask for. It only uses 1/3 cup of butter rather than an entire cup of oil, so it has to be a little healthier, right?? :)

3 or 4ripe bananas, mashed

1/3 cmelted butter

1/2 cgranulated sugar

1/2 cfirmly packed brown sugar

2eggs, beaten

1 tsppure vanilla extract

1 tspbaking soda

1 tspcinnamon

1/2 tspcloves

1/2 tspnutmeg

1/4 tspginger
-
1/2 tspsalt

1/2 cwalnut pieces

1 1/2 cflour
How To Make banana bread

1Preheat oven to 350 degrees. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugars, eggs, vanilla extract, baking soda, cinnamon, cloves, nutmeg, ginger, salt and walnut pieces. Add the flour last, and mix just until combined.

2Pour into a greased and lightly floured 8" or 9" loaf pan. Bake for one hour, checking at 50 minutes and every 5 minutes after that (since ovens can vary greatly, espcially when baking breads). Enjoy!
