apple coffee cake

I tend to use disposable 8 inch round pans when I make this cake because 1) people always want to take some home; and 2) since it freezes and reheats so well I like to make extra and don't want to freeze all my cake pans! I just wrap it up airtight in the disposable pans. 15-18 minutes in a 300 F oven and it's ready to go!

Ingredients For apple coffee cake

  • TOPPING:
  • 1/4 c
    all purpose flour
  • 1/4 c
    brown sugar, firmly packed
  • 2 Tbsp
    butter, softened
  • 1/2 tsp
    cinnamon, ground
  • BATTER:
  • 2/3 c
    butter, room temperature
  • 1/3 c
    sugar
  • 1/2 c
    sour cream
  • 1 tsp
    vanilla extract
  • 1
    egg
  • 1 1/3 c
    all purpose flour
  • 2/3 tsp
    baking soda
  • 1/8 tsp
    salt
  • 1 c
    chopped fresh apple

How To Make apple coffee cake

    Preheat oven to 350 F. Grease an 8 inch round cake pan.

    In small bowl, combine all topping ingredients until mixture forms coarse crumbs. Set aside

    In mixing bowl, cream butter and sugar until light and fluffy. Beat in egg, sour cream, and vanilla.

    In another bowl, combine flour, baking soda and salt. Mix into the creamed mixture, and blend well.

    Spoon or pour half of the batter into greased cake pan.

    Sprinkle with the apples and half of the topping mixture

    Top with remaining batter

    Sprinkle remaining topping mixture over top of unbaked cake

    Bake for 25 - 30 minutes or until a wooden pick inserted in the center comes out clean. Serve cake warm.

    For a little variation, try sprinkling about 1/3 cup raisins or dried cranberries with the apples
