I came up with this recipe while trying to use up buttermilk which I don't usually keep on hand...but with the way my family loved this bread, buttermilk may become a pantry staple! Its a dense, sweet bread perfect for holiday gatherings and get togethers. I hope you enjoy it.

3/4 cvegetable oil

4eggs

1 1/2 tspcoconut extract

1/2 tspalmond extract

3 cflour

1 tspnon-aluminum baking powder

1/2 tspbaking soda

1/2 tspsalt

1 cbuttermilk
-
1 1/2 csweetened coconut

1 cchopped almonds
-
1 cchocolate chips
How To Make almond joy bread

1In the bowl of your mixer, blend the sugar, oil, eggs and extracts.

2In a separate bowl, combine the flour, baking powder, baking soda and salt: add to the sugar mixture, alternating with the buttermilk till just moistened.

3Fold in coconut, chocolate chips, and almonds.

4Pour into 2 greased loaf pans and bake at 325 for 60-65 minutes. Done when toothpick comes out clean. Cool for 10 minutes in pans before removing, then cool on wire racks.
