I make this recipe all the time for potlucks, and am always asked for the recipe. It's easy, tasty, and my family loves it! It's almost like a quiche, but I serve it as an appetizer. Enjoy!!

Ingredients For zucchini and cheese bread

1 1/2 ccoarsely shredded, unpeeled zucchini

1 Tbspminced onion flakes

1 Tbspdried parsley flakes

1 Tbspdried basil

1 ozgrated parmesan cheese

1/8 tspgarlic powder

2 Tbspplus 2 teaspoons vegetable oil

2eggs, beaten
-
3/4 call purpose flour
-
1 tspbaking powder
-
1 ozshredded cheddar or swiss cheese
How To Make zucchini and cheese bread

1Preheat oven to 350. In a large bowl, combine zucchini, onion flakes, parsley flakes, dried basil, parmesan cheese, garlic powder, oil, and eggs. Mix with a fork or wire whisk

2Combine flour and baking powder. Stir into zucchini mixture, mixing well.

3Place mixture into a 9 inch round nonstick cake pan or one that has been sprayed with a nonstick cooking spray. Sprinkle evenly with cheddar or swiss cheese.

4Bake 40 minutes, or until a toothpick inserted in the center comes out clean.
