This is my version of Mexican cornbread. It's got a bit of a kick to it. It will be as mild or hot as your pico de gallo is.

Ingredients For spicy cornbread or cornbread muffins

1 cyellow corn meal

1 cflour, all purpose

1/4 csugar
-
4 tspbaking powder

1/2 tspsalt

1 tspgranulated garlic

1 tspgranulated onion

1egg
-
1 1/2 cbuttermilk (or sour milk)

1/4 cbutter, melted
-
1 cpico de gallo or 1 can rotel, drained

1 cgrated cheese, your choice

2Mix together dry ingredients. Add milk and egg. Mix together until lumps are gone. Add pico de gallo and cheese, mix well.

3Place butter in cast iron skillet and heat till melted in oven. Remove and pour cornbread into pan. Bake 425° for 25 min.

4For air fryer oven: 360º 30 min
