Ingredients For olive loaf quick bread

1 cchopped olives, drained. save the brine.

2 call-purpose flour

1/2 tspbaking soda

2 tspbaking powder
-
2 Tbspfresh chopped basil

1 tspsalt

3 lgeggs
-
1/3 cgreek yogurt (plain)

1/3 cbrine from green olives
-
2 1/2 Tbspolive oil
How To Make olive loaf quick bread

1Preheat oven to 340 degrees. Grease and flour a 9-in loaf pan or line with parchment.

2In a large bowl mix together flour, baking soda, baking powder, basil, olives and salt.

3In a medium bowl, mix together eggs, yogurt, olive brine and olive oil.

4Stir egg mixture into the dry ingredients. Batter should be thick. (Not runny like cake batter, but not as thick as pizza dough.)

5Spoon into prepared pan and bake 40 minutes or until a toothpick comes out clean.

6Turn out onto rack to cool.
