Ingredients For olive loaf quick bread

  • 1 c
    chopped olives, drained. save the brine.
  • 2 c
    all-purpose flour
  • 1/2 tsp
    baking soda
  • 2 tsp
    baking powder
  • 2 Tbsp
    fresh chopped basil
  • 1 tsp
    salt
  • 3 lg
    eggs
  • 1/3 c
    greek yogurt (plain)
  • 1/3 c
    brine from green olives
  • 2 1/2 Tbsp
    olive oil

How To Make olive loaf quick bread

    Preheat oven to 340 degrees. Grease and flour a 9-in loaf pan or line with parchment.

    In a large bowl mix together flour, baking soda, baking powder, basil, olives and salt.

    In a medium bowl, mix together eggs, yogurt, olive brine and olive oil.

    Stir egg mixture into the dry ingredients. Batter should be thick. (Not runny like cake batter, but not as thick as pizza dough.)

    Spoon into prepared pan and bake 40 minutes or until a toothpick comes out clean.

    Turn out onto rack to cool.
