I got this recipe from my daughter's grandmother. I don't serve it as often as I should, but it's a great companion to a bowl of chili.

Ingredients For mexican cornbread

1 cyellow corn meal
-
1 call purpose flour
-
2 Tbspsugar
-
4 tspbaking powder
-
1/2 tspsalt

1 cmilk
-
1 lgegg
-
1/4 cvegetable oil
-
1 smjalapeno pepper, seeded and diced

1/4 cshredded cheddar cheese
-
1 cancream style corn
-
1 Tbspbacon grease
How To Make mexican cornbread

1Preheat oven to 425 degrees.

2Combine cornmeal,flour,sugar,baking powder, and salt in a large mixing bowl.

3Add milk, egg, and oil. Beat until mostly smooth.

4Fold in pepper,cheese, bacon grease and corn.

5Bake in a greased cast iron skillet until a toothpick inserted in the center comes out clean (approximately 25 minutes)
