mama's zucchini bread

My mother in law used to bring these little loaves when she visited. I thought certainly they would be difficult to make. Although once over the initial fear I tried and was pleasantly surprised at how easy they are to bake. And so good! Serves to curb hunger any time, or as a great gift to send someone also travels well enough to bring with you on any occasion.

Ingredients For mama's zucchini bread

  • 3
    eggs
  • 3 c
    all purpose flour
  • 3 tsp
    pure vanilla extract
  • 2 c
    sugar
  • 2 tsp
    cinnamon
  • 2 c
    shredded zucchini
  • 1 c
    oil
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1 tsp
    salt

How To Make mama's zucchini bread

    Preheat oven 350 degrees. Oil baking loaf pans, set aside.

    Shred medium zucchini
  • 3
    Mix thoroughly flour, baking soda, baking powder, salt, cinnamon.

    Make a well in center of flour mixture. Place eggs, vanilla, oil, vanilla, zucchini and stir, stir, stir until a nice smooth batter.

    Bake for 1 hr. Then cool & slice.
