My grandparents, 98 and 96 years old, were asking me to make Banana Nut Bread, when I was visiting. They are both on strict diets and I did my best to throw something together that they would like, but would fit their diets. They claim its like eating cake and loved it!!!

Ingredients For low carb/low fat banana nut bread

  • 1 pkg
    betty crocker super moist butter recipe yellow cake mix
  • 3 1/2 oz
    sugar free jell-o banana cream flavor
  • 1 c
    water
  • 1 c
    eggbeaters
  • 1/4 c
    motts unsweetened applesauce cup
  • 1 c
    mashed banana
  • 1/2 c
    chopped walnuts

How To Make low carb/low fat banana nut bread

    Preheat oven to 350 degrees.

    Beat first 5 ingredients in large bowl with mixer. Add bananas and nuts, mix well. Pour into Muffin pans or Loaf pan, sprayed with pam. Cook for 40 minutes for loaf or Mini Loafs. Cook for 20 to 25 minutes for muffins.
