I enjoy a make ahead topping or bread crumb mixture. This will chop preparation time. It's versatile to be used with different recipes. Also, it will stay fresh in an airtight container or, freeze it if you choose. Anytime a meat recipe calls for flour etc, try using this crumb mixture after dipping in beaten eggs.

Ingredients For italian flavored bread crumbs

  • 1 c
    white bread, run through food processor to crumble
  • 1/8 c
    plain flour
  • 1/4 c
    yellow cornmeal, plain or self rising
  • 2 Tbsp
    creole seasoning
  • 1/8 c
    powdered garlic
  • 2 Tbsp
    dried oregano
  • 1 tsp
    dried red pepper flakes
  • 2 Tbsp
    dried basil
  • 1/8 tsp
    (pinch) fennel seed
  • black pepper to taste

    Mix well, store in air tight container. Increase recipe for larger recipe needs.

    This is good to batter chicken breast that have been hammered with a mallet to flatten and dipped in beaten eggs. You can fry a short time in heated Olive Oil, med high, then place on a foil covered baking pan. This should be a 9x13 pan with sides. Put tomato sauce and grated white cheese on top. Bake in a preheated 350 degree oven until done 15 -20 minutes, if fried crusty first.
