This a tasty morsel to try at your next party or event. Some crumbled bacon may be mixed with the beets if desired. You know I did. lol. Enjoy your vegetables!

Ingredients For harvard beets on italian toast

  • 4 slice
    thick italian bread toasted and spread with garlic butter
  • 1/2 c
    or more mashed harvard beets
  • 4 slice
    fresh mozzarella cheese
  • sprinkling of minced mint leaves for garnish
  • olive oil for drizzle on top for garnish

How To Make harvard beets on italian toast

    Toast and spread garlic butter on bread. Mash beets and spread on top of toasted bread. Place a slice of cheese on each toast. Sprinkle with mint, and drizzle with a bit of olive oil.

    Place toast on cookie sheet and bake in 400^ oven until cheese melts about 1 minute. Enjoy!
