pesto for spread

2 cfresh basil

2 cfresh arugula leaves

1/4 cfresh flat-leaf parsley leaves

3/4 cwalnuts

4 Tbspolive oil

4 clovegarlic cloves, peeled

3/4 cparmigiano-reggiano cheesefresh grated
How To Make grilled pesto, avocado, bacon tomato sandwich

1Put first 6 ingredients in a food processor. Pulse 7-8 times until chunky/smooth, add cheese and pulse a couple more times.

2(If it seems a bit dry for spreading, add a bit more oil) (Any leftovers can be stored in refrigerator, or it is yummy stirred into cooked pasta)

3Fry 6 slices of bacon and drain Slice one avocado Slice one tomato Spread 4 slices sour dough bread or nutty whole wheat bread with butter

4Spread opposite sides of bread with pesto, place sliced avocado over pesto on 2, and top with 3 pieces of bacon and tomato slices, and top with other 2 pieces of bread. Grill on both sides until golden browned...ENJOY!!
