~ cornmeal griddle cakes ~
The kids wanted a sandwich for lunch. I was out of bread, so I made griddle cakes and boy were they happy I did. Use as an alternative to corn bread or do as I did and make a sandwich. Awesome!

3I made sandwiches and they were delicious. I used roast beef, cheese, juicy tomato, mayo, salt & pepper...so good! They loved them. They would be great made into a BLT! I'll be trying that next!
