Ingredients For ghoulish empanads

1 pkgrefrigerated pie crust

2egg yolks, beaten
-
green food coloring (preferably the paste)
- FILLING:

1-1/2 lbsweet potatoes (or yams..the orange ones)

1 Tbspbutter softened
-
1/4 tspground cumin
-
salt and pepper to taste
How To Make ghoulish empanads

1peel, cook and puree sweet potatoes

2combine pureed potatoes with butter, cumin and salt and pepper
-
3Preheat oven to 450 while you assemble empanadas

4unfold pie crust onto a floured board, using a 3" biscuit cutter cut 20-25 circles

5scoop a tsp of filling into the center of each circle, fold over to a half moon shape, seal well with a fork or your fingers

6combine egg and food coloring and brush onto empanadas
-
7bake 10-12 minutes until crisp and cooked through. You could put a dipping sauce with this if you want, maybe a warm "blood" marinara or a garlic butter??
