3 1/2-4 cfreshly milled flour

1/2 csourdough starter

1 cwater
-
1/4 colive oil

2 Tbsphoney

1 1/2 tspsalt
How To Make fresh milled sourdough dinner rolls

1In the bowl of a stand mixer add the water, sourdough starter, olive oil, and honey. Pulse until combined.

2Add 2 cups of the flour. Cover and let soak for 30 minutes to 1 hour.

3Add the salt and continue adding flour 1/2 cup at a time on low speed until you have a soft dough that cleans the sides of the bowl.

4Knead on speed 2 for 10 minutes or until the dough is stretchy and smooth.

5Place the dough in a lightly greased bowl and cover with plastic wrap.

6Let rise overnight or for 8-24 hours in a warm spot.

7The next day, turn dough onto a lightly floured work surface.

8Divide into 12 equal pieces.

9Roll each piece into a round dough ball and pinch the seam closed.

10Put shaped rolls on a parchment paper lined baking sheet.

11Cover with plastic wrap or damp tea towel and let rise for 1 to 1 1/2 hours.

12Preheat the oven to 375 degrees F.

13Brush tops of the rolls with an egg wash.

14Bake for 25-30 minutes or until golden brown.

15Let cool completely before storing.

16Store in an airtight container on the counter for 3-4 days. Freeze in freezer safe bag for up to 3 months.
