Something simple and easy that is like mexican cornbread without all of the stuff in it. It is sweet and fast which is good with a 3 year old under your feet.

Ingredients For cornbread cakes

1 packagejiffy cornbread mix

1egg
-
1/3 cupwater
-
1 packagegreen giant steamers frozen corn

as neededolive oil, extra virgin
How To Make cornbread cakes

1mix egg, water and jiffy cornbread mix according to box

2Place steamer of corn in microwave for 4 minutes

3add corn to cornbread mix (you may want to cool corn in refrigerator for a few minutes first) and stir

4Heat a griddle (350-400) or iron skillet and add a couple tablespoons of olive oil to surface or spray surface.

5Pour mixture onto the surface like a pancake and let it brown on each side and serve
