Something simple and easy that is like mexican cornbread without all of the stuff in it. It is sweet and fast which is good with a 3 year old under your feet.

Ingredients For cornbread cakes

  • 1 package
    jiffy cornbread mix
  • 1
    egg
  • 1/3 cup
    water
  • 1 package
    green giant steamers frozen corn
  • as needed
    olive oil, extra virgin

How To Make cornbread cakes

    mix egg, water and jiffy cornbread mix according to box
  • 2
    Place steamer of corn in microwave for 4 minutes
  • 3
    add corn to cornbread mix (you may want to cool corn in refrigerator for a few minutes first) and stir
  • 4
    Heat a griddle (350-400) or iron skillet and add a couple tablespoons of olive oil to surface or spray surface.

    Pour mixture onto the surface like a pancake and let it brown on each side and serve
