Ingredients For corn fritters

1 (15 oz) canfiesta style corn -- drained

1 cflour

1/2 cchicken broth

2 lgeggs -- love those fresh ones from my aunt's farm

1 tspbaking powder

1 Tbspminced onion

1/2 tspsalt

cooking oil
How To Make corn fritters

1Pour vegetable oil into skillet to 1/2 inch depth.

2Using fork, stir together 1 tablespoon oil, corn, flour, broth, eggs, baking powder, onion and salt in medium bowl.

3Drop batter by large tablespoonfuls into hot oil and fry for 3 - 5 minutes until golden brown.
