Ingredients For corn fritters

  • 1 (15 oz) can
    fiesta style corn -- drained
  • 1 c
    flour
  • 1/2 c
    chicken broth
  • 2 lg
    eggs -- love those fresh ones from my aunt's farm
  • 1 tsp
    baking powder
  • 1 Tbsp
    minced onion
  • 1/2 tsp
    salt
  • cooking oil

How To Make corn fritters

  • 1
    Pour vegetable oil into skillet to 1/2 inch depth.
  • 2
    Using fork, stir together 1 tablespoon oil, corn, flour, broth, eggs, baking powder, onion and salt in medium bowl.

    Drop batter by large tablespoonfuls into hot oil and fry for 3 - 5 minutes until golden brown.
