Ingredients For champion zucchini bread

2eggs, at room temperature and lightly beaten

1 1/3 csugar

2 tspvanilla

3 cfresh grated zucchini (before grating the zucchini should be at room temperature)

2.3 cmelted butter

2 tspbaking soda

Pinchsalt

3 ca/p flour

1/2 tspnutmeg

2 tspcinnamon
How To Make champion zucchini bread

1Preheat oven to 350 degrees. Spray one 5 X 9 loaf pan with PAM and set aside.

2In a large bowl, mix together sugar, eggs, and vanilla. Fold in the grated zucchini and then the melted butter.

3Sprinkle the baking soda and salt over the mixture and stir in. Add the flour, a third at a time, stirring after each addition. Sprinkle the cinnamon and nutmeg over the batter and stir in.

4Pour the batter into the loaf pan. Bake for 55 minutes (check for doneness at 50 minutes) or bake until a wooden toothpick inserted in the center comes out clean. Cool in pan for 10 minutes. Turn out on a wire rack to cool completely.
