bacon-flavored corn sticks

I inherited a corn stick iron pan from my great grandmother. This is one way I use it. The bacon grease helps keep it seasoned. The prep time assumes you have bacon drippings saved. (A must in the Southern kitchen.) If not, you will need to make some. Enjoy the bacon! :)

Ingredients For bacon-flavored corn sticks

  • 1 c
    yellow cornmeal
  • 1 c
    all-purpose flour
  • 2 1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 c
    milk
  • 1/2 c
    boiling water
  • 1/4 c
    melted bacon drippings, plus 2 Tbsp more for pan
  • 2 lg
    eggs, beaten

How To Make bacon-flavored corn sticks

    Combine the first 4 ingredients in a large bowl; stir well.

    Combine the milk, boiling water, 1/4 cups melted drippings, and eggs. Add to the dry ingredients, stirring just until moistened.

    Brush 2 cast-iron corn stick pans with remaining 2 tablespoons drippings. Place the pans in a 425 degree F oven for 3 minutes or until very hot.

    Remove from the oven and spoon the batter evenly into the pans, filling 3/4 full. Bake for 18 to 20 minutes or until lightly browned. Remove the corn sticks from the pans immediately. Serve warm.
