I know there are alot of Zucchini Bread recipes out there but this is the only one I ever use. It was a recipe that my Grandmother used. I do change it up by adding chocolate chips to it. My grandgirlies love it!

Ingredients For zucchini bread

  • 3
    eggs
  • 2 c
    sugar
  • 1 c
    vegetable oil
  • 2 c
    raw zucchini, grated, ground or blended
  • 3 tsp
    vanilla
  • 3 c
    flour
  • 1 tsp
    salt
  • 1 tsp
    baking soda
  • 1/4 tsp
    baking powder
  • 3 tsp
    cinnamon
  • 2 tsp
    nutmeg
  • 1 c
    chopped nuts (if desired)

How To Make zucchini bread

    Beat eggs until light and foamy.

    Add sugar, oil, zucchini and vanilla.

    Mix lightly but well.

    Combine salt, soda, baking powder, flour, cinnamon and nutmeg.

    Add to egg mixture. Stir until well blended. Add nuts.

    Pour into two 9"x5" pans. Bake at 350 degrees for one hour. Cool on rack.
