I found these bolillo rolls at the local marketplace. They were perfect for sandwiches. I had a salad ready for lunch, but didn't have time for both a sandwich and salad. So, I compromised! A veggie salad sandwich!. Great served with a side of potato salad or chips anytime.

green onion, thin sliced

sweet and/or hot pepper, thin sliced
How To Make veggie salad sandwich

1Slice open the bolillo roll, horizontally lengthwise.

2Slather with mayonnaise.

3Add the salad and enjoy.

4You can also add mustard, salad dressing (sparingly) or any other vegetable to the salad that you like. (For people who love their meat, add thin slices of the meat of your choice.)
