This is one of two pizza dough recipes I have, yet use this one more frequently. I prefer thin, crispy crust pizza's. This is one of the easiest doughs to spread. I love the ease of it. Make sure you sprinkle your pan with corn meal as it adds to the crunch. Enjoy!

Firstly, I make my dough in my kitchen aid mixer and use my dough hook to knead. Get yourself a cup of warm water. Sprinkle in the sugar and stir. Now sprinkle the dry yeast over the water and leave alone. When frothy, pour into bowl of mixer. Add the flour, salt and oil. I use my mixing beater until incorporated, then switch to my dough hook and mix on low - med speed for 6 - 8 minutes or until dough is good and smooth.

Once dough has rested. I always grease my pizza pans with olive oil and sprinkle with corn meal. This dough spreads very easily. I just love the ease of it. Spread into your pan and I always pre bake for 5 minutes at 450 degree F. I bake my pizzas at the same temp. On the lowest oven position.

If making by hand, mix the salt, flour, oil and yeast mixture together with a spoon. On a floured surface, knead until you get a smooth, pliable dough. About 6 minutes. Place back into bowl and cover, let rest for 30 minutes.
