How great is this ? We always have a lot of summer squash from the garden and this will be great !!

Ingredients For summer squash bread!

    eggs
  • 2 c
    sugar
  • 1 c
    vegtable oil
  • 1 tsp
    vanilla extract
  • 1 c
    whole wheat flour
  • 21/2 c
    white flour (or 3 1/2 c flour w 1 1/2 tsp. baking soda)
  • 3/4 tsp
    baking powder
  • 2 c
    grated squash
  • 1 tsp
    cinnamon
  • 1 tsp
    nutmeg
  • 1 tsp
    salt
  • 1/2 c
    nuts
  • 1 c
    seedless raisins (plump raisins in a warm water soak

How To Make summer squash bread!

    preheat oven 350 degrees grease 2 bread pans

    Beat 4 eggs. Beat n 2 cups sugar. Add 1 cup vegetable oil and 1 tsp. vanilla. Combine 1 cup whole wheat flour and 2 1/2 cups white flour OR 3 1/2 cups four with 1 1/2 tsp baking soda, 3/4 tsp baking powder, 1 tsp nutmeg, 1 tsp. salt. Stir in 1/2 cup nuts and 1 cup seedless raisins. Add flour mixture to eggs, sugar, oil and vanilla and mix up with 2 cups grated squash. Pour into 2 greased pans.

    Cook 50 to 60 minutes ~ check at 50 minutes. Let stand 10 minutes and turn out on rack. Freeze if desired !
