strawberry shortcake bread w/ glaze

A lovely woman at my church made a cake like this many yrs ago and I was able to duplicate the recipe. It's a wonderful Sunday morning bread to serve, or as a snack anytime. just make sure to sift the flour or the bread comes out too dense.

Ingredients For strawberry shortcake bread w/ glaze

  • 2 c
    diced fresh strawberries
  • 2 c
    sugar
  • 1/2 c
    softened butter
  • 2 lg
    eggs
  • 2-1/2 c
    sifted flour, very important to sift the flour
  • 1 tsp
    baking soda
  • 1/2 c
    sour cream
  • 1/2 tsp
    vanilla
  • 1 c
    powdered sugar
  • 1/2 c
    light cream
  • whipped cream for garnish
  • sliced strawberries as garnish

How To Make strawberry shortcake bread w/ glaze

    heat oven to 350. Cut parchment paper to fit a 9-1/2 x 5-1/2" loaf pan, spray the paper w/ cooking spray. Place 1 cup of the strawberries and 1 cup sugar into a medium sized bowl, stir, cover and refrigerate.

    In medium bowl, mix the sifted flour and baking soda. In lg bowl, cream together the butter and remaining sugar. Beat in the eggs and then stir in sour cream and vanilla.Beat until creamy.

    Fold in the dry ingredients until just mixed. Fold in 1 cup strawberries, don't stir. Spoon mix into pan. Bake 45 mins or until a toothpick inserted in center comes out clean. Let bread/cake cool. In medium bowl, whisk together the powdered sugar and light cream. drizzle glaze over top of bread. Serve bread topped w a couple sliced berries and a dollop of whip cream!
