steven king's basic bread
This recipe is Steven King's recipe with tweaks to time to rise, temperature, time to bake, and how many loaf pans. This was published in a cookbook in 1996 called Just Peachy:Cooking Up A Cure. Steven King wrote this: "Baking bread is one of the waya I relax. I like kneading it, and I love the smell of it, the way it fills the house and makes your mouth water."

Ingredients For steven king's basic bread
- DISSOLVE YEAST

1 Tbspyeast

3/4 cwarm water
-
2 Tbspsugar
- DOUGH

2 cwarm milk

3 Tbspsugar

1 Tbspsalt

2 Tbspshortening

8-9 cflour, all purpose or bread flour
- FOR BRUSHING BEFORE BAKING

1egg yolk
-
1 Tbspwater
- FOR BRUSHING AFTER BAKING

4 Tbspmelted butter
How To Make steven king's basic bread

1In a large stand mixer, mix together the first three ingredients and let sit 5 minutes to dissolve the yeast.

2Add to the bowl the milk, sugar, salt, shortening and 4 cups of the four. With a paddle attachment beat until well combined, scraping sides of bowl as needed.

3Switch to dough hook attachment. Add 4 more cups of flour, turn on low and let mix. It should start pulling away from sides of bowl, if not add more flour 1/4 cup at a time. Once it is pulling away let it mix or "knead" the dough for 8 minutes.

4Grease a large mixing bowl with shortening. When dough is done mixing, turn out and shape into a ball. Place in greased bowl, turn to coat dough completely. Cover with towel and let rise until doubled in size, about 30-60 minutes.

5Grease 3 loaf pans with shortening.

6Punch down dough. Turn out and divide into 3 pieces. Shape each piece into a loaf shape to fit your pans. Place dough in pans. Cover and let rise for 30-60 minutes or until about 1/2 an inch above the edge of loaf pan.

7Preheat oven to 375°F. Mix together the egg yolk and water. Brush lightly over top.of loaves. Place.in hot oven and bake for 20-30 minutes depending on your oven.

8When done should sound hollow when top is tapped. Remove from oven and lightly brush loaves with melted butter. Remove from pans and cool completely before cutting and storing.

9I store this in Ziplock bags. These usually only last 3 days because we use it fast so I am unsure of how long it keeps after that.
