My hubby gets credit for the title! I told him how to make this over the phone and he says I said something about "Even an idiot can make this" -- which I of course deny! But now he calls it that. The best part about this bruschetta is EVERYTHING! But a cautionary note...this is NOT low-cal!! However, if you want to WOW a guest, this easy appetizer or snack is a sure-thing!

Ingredients For so-easy-an-idiot-could-make-it bruschetta

    thick slices of french or italian bread
  • 1/2 c
    butter (no substitutions)
  • 1-2
    roma tomatoes, diced
  • 2
    mozzarella cheese sticks, diced
  • 1/2 Tbsp
    chopped fresh basil
  • 2 Tbsp
    olive oil

How To Make so-easy-an-idiot-could-make-it bruschetta

    Preheat oven to 400 degrees F.

    In a large skillet, melt butter. Dip each side of each slice of bread in melted butter. Grill each side of bread in skillet; remove to baking sheet.

    In a small bowl, toss tomatoes, mozzarella, and chopped basil with olive oil.

    Spread 1-2 tablespoons of tomato mixture onto each slice of bread.

    Bake in preheated oven for 5-10 minutes until cheese is just beginning to melt. Serve immediately as an appetizer or a side dish.
