Ingredients For sausage upside down cornbread

  • 1 lb
    bulk sausage
  • 1 c
    chopped onion
  • 1/3 c
    chopped bell pepper
  • 2 Tbsp
    flour
  • 1
    6 oz. can tomato paste
  • 1 tsp
    salt
  • 1 tsp
    chili powder
  • 1/8 tsp
    pepper
  • 4 oz
    cheddar cheese, cut in 1/2 inch cubes
  • 1/2 c
    pitted ripe olives, sliced
  • 2
    8 1/2 oz. pkg. corn muffin mix

How To Make sausage upside down cornbread

    Preheat oven to 400. Cook sausage, onion, and pepper in a skllet until sausage is brown and crumbly. Stir in flour. Mix in next 4 ingredients. Remove from heat and stir in cheese and olives. Spread evenly in a 9 inch square pan, sprayed with vegetable spray. Prepare muffin mix according to package directions; spread over sausage. Bake 30 to 35 minutes. Let stand in pan 5 minutes; loosen edges. Invert onto plate. Serve immediately.
