Ingredients For popeye panini

  • 2
    ciabatta rolls
  • basil pesto
  • fresh, rinsed & dried, baby spinach
  • 4 slice
    mozzarella cheese
  • diced artichoke hearts
  • feta cheese

How To Make popeye panini

  • 1
    On the top half of bread, add pesto, baby spinach and two slices of mozzarella (in that order). On the bottom, artichoke and feta.

    Toast open faced in oven till cheese is melted. Close sandwich and place top down on a panini grill, that has been lightly sprayed with cooking spray. Leave it on there till it it toasted to your liking. Cut in half, corner to corner, and serve!
