This was my mothers recipe. I have tried many different ones ,but this one is the best. This is from the 70's. It goes great with a pot if pinto beans.

Ingredients For mexican cornbread

1 ccornmeal

1 cmilk
-
1 cchopped onion

1 cancorn,drained

1 clovegarlic

2eggs
-
1/4 tspsalt

1/2 tspbaking powder

1/4 cbutter,melted

1 ccheddar cheese, shredded

3jalapeno peppers,chopped
How To Make mexican cornbread

1Mix all together except the cheese and pepper. Pour half of the batter in a square baking dish that has been sprayed with a nonstick spray, add the cheese and peppers and pour the rest of the batter over the cheese and peppers. Bake at 350 for 20-25 minutes or until brown on top.
