A co-worker made this last year for one of our potluck's (2014). She said it 's a family favorite. Well she must be right because she got so many requests for her recipe! I saw that there were so many recipes on here already w/this similar name but this one is actually just different enough, I thought I would go ahead & post it.

Ingredients For tj's mexican casserole

  • 2 lb
    hamburger
  • 1 pkg
    taco seasoning mix
  • 1 can
    black beans, drained & rinsed
  • 1 can
    corn, drained & rinsed
  • 2
    roma tomatoes, diced
  • 1 c
    mexican 4 cheese blend, grated or fave kind
  • 1 pkg
    jiffy cornbread, prepared according to directions
  • sour cream, for garnish

How To Make tj's mexican casserole

    Preheat oven to 400 degrees. Prepare hamburger according to Taco Seasoning directions.

    Add beans, corn and tomatoes stirring just to heat through.
  • 3
    Pour meat mixture into a sprayed casserole dish (13x9 is perfect).

    Sprinkle ¾ cup of the cheese over meat.
  • 5
    Spread the UNCOOKED cornbread mixture over the meat.

    Sprinkle the rest of the cheese over the cornbread.
  • Unfortunately the top did get a little overcooked (I'm still getting used to our oven).

    Bake casserole by cornbread package directions. Let rest about 10 minutes after baking. To serve: cut serving and place on plate cornbread side down. Top with sour cream if desired.
