A co-worker made this last year for one of our potluck's (2014). She said it 's a family favorite. Well she must be right because she got so many requests for her recipe! I saw that there were so many recipes on here already w/this similar name but this one is actually just different enough, I thought I would go ahead & post it.

Ingredients For tj's mexican casserole

2 lbhamburger
-
1 pkgtaco seasoning mix
-
1 canblack beans, drained & rinsed
-
1 cancorn, drained & rinsed

2roma tomatoes, diced
-
1 cmexican 4 cheese blend, grated or fave kind
-
1 pkgjiffy cornbread, prepared according to directions
-
sour cream, for garnish
How To Make tj's mexican casserole

1Preheat oven to 400 degrees. Prepare hamburger according to Taco Seasoning directions.

2Add beans, corn and tomatoes stirring just to heat through.

3Pour meat mixture into a sprayed casserole dish (13x9 is perfect).

4Sprinkle ¾ cup of the cheese over meat.

5Spread the UNCOOKED cornbread mixture over the meat.

6Sprinkle the rest of the cheese over the cornbread.

7Bake casserole by cornbread package directions. Let rest about 10 minutes after baking. To serve: cut serving and place on plate cornbread side down. Top with sour cream if desired.
