mama's white bread
My Mama has been making this bread since well before I was born. One of my fondest childhood memories is having a slice of buttered bread, right out of the oven. For best results, use a serrated knife to cut a slice.

How To Make mama's white bread
-
1Into a large plastic bowl 1/4 c sugar 1 Tbsp salt 1/4 c vegetable oil 1/2 c hot water You want the water to be hot enough to dissolve the sugar and salt, but not boiling. Stir together and let cool to lukewarm.
-
2While that is cooling, in a 2 cup measuring cup, Mix together 2 pkgs yeast 1/2 tsp sugar 1/2 c lukewarm water Note: lukewarm water is about as warm as you would use to bathe a baby.
-
3Stir the yeast mixture together and let proof. In about 5 minutes it should puff up, sort of like the top of a beer when your pour it into a glass. Pour the yeast mixture into the cooled sugar/oil mixture. Stir together well.
-
4To this mixture add 1 c luke warm water 2 c flour Note: I have used AP flour and bread flour. Either one works just fine. Beat this mixture until smooth. It will be quite sticky. I do all my mixing with a wooden spoon.
-
5Add In 2-3 c flour I add the first cups one at a time, stirring well in-between. The third cup is added a little at a time. You may not need all of it to make your dough non sticky.
-
6Once the dough is not sticky, it's time to kneed. I kneeded right in the bowl, adding a sprinkle of flour here and there as necessary. Kneed for about 7 minutes.
-
7Form a ball and cover loosely. I use a dishtowel. Let rise until doubled in size, about an hour.
-
8Punch down and form into 2 loaves. Place loaves into well greased loaf pans. Let rise until doubled in size.
-
9Bake in a pre heated 350ª oven for 30-40 minutes.
