This is a recipe I created with my grandma in mind. I love to serve them with roast or smothered pork chops ( because GRAVY!) and baby green Lima beans.

Ingredients For johnny cakes

  • 2 c
    self-rising cornmeal
  • 2 Tbsp
    sugar
  • 2 tsp
    onion powder
  • 2-3 Tbsp
    green onions, chopped
  • 2 c
    boiling water
  • 1 c
    cooking oil

How To Make johnny cakes

  • 1
    Heat oil in iron skillet or any heavy bottomed skillet to Med-high (hot but not smoking).

    Mix first 4 ingredients together.

    Add 2 cups boiling water and quickly stir together. Pat by lg. spoonfuls in fingers and place in hot oil. Fry 3-4 at a time for 3 minutes in each side.

    Drain on paper towels. Serve hot with butter.

    *NOTE* If you can’t find self-rising cornmeal, use 1 1/2 c. White or yellow cornmeal with 1/2 c. self-rising flour.
