This recipe just cries out for a good bowl of chili or some sort of Mexican bean dish. Pass the butter.

Ingredients For ellen's cheesy cornbread

  • 1/4 c
    finely chopped onion
  • 1 Tbsp
    butter
  • 1 pkg
    (10 oz.) cornbread mix
  • 1
    egg
  • 2 Tbsp
    sugar
  • 1/3 c
    milk
  • 1/2 c
    shredded sharp american cheese (2 oz.)

How To Make ellen's cheesy cornbread

    In a skillet cook onion in butter till tender but not brown. Prepare cornbread mix according to package directions, including egg and milk. Add the sugar.

    Stir in the cooked onion and shredded cheese. Spoon the batter into a greased 8x8x2" round or square baking pan.

    Bake in a pre-heated 375-degree oven about 30 minutes. Remove from oven and keep warm. Before serving, cut into wedges or squares.
