I have several versions of egg salad mix and they're always easy to make. Great for salads or sandwiches.

Ingredients For easy egg salad mix 1

    hard-boiled eggs, cooled and chopped
  • 1 Tbsp
    minced onion
  • 2
    celery stalks, minced
  • 1 tsp
    celery seed
  • dash
    each salt and pepper
  • 1/2 c
    light mayonnaise
  • 1 tsp
    yellow mustard

    In lg bowl mix all ingredients well. Refrigerate until ready to use.
