This is what my family calls 'Yankee" dumplings. If you allow the lid to stay closed during the 10 minute cooking time, they will never be gummy!
method
Stove Top
Ingredients For dumplings

2 cflour (1/2 white & 1/2 oat or wheat is good)

1/2 tspsalt

4 tspbaking powder

1 Tbsp(heaping) parmesan cheese, opt

milk
How To Make dumplings

1Mix dry ingredients thoroughly and add enough milk to make a stiff batter. Spoon batter into boiling broth until entire top is covered in batter. Cover with a tight fitting lid. Reduce heat and simmer 10 minutes.

2DO NOT LIFT THE LID DURING THIS TIME!!

3The dumplings come out light and fluffy!!
